Kasuri Methi, the dried leaf of Trigonella foenum-graecum, takes its commercial name from Kasur — a historic town in Punjab now in Pakistan — where a particularly aromatic ecotype of fenugreek was traditionally grown. The fresh green leaves are harvested before the seeds mature and carefully sun-dried to preserve their characteristic bitter-sweet, maple-like aroma derived from the compound sotolone.
