Description
Kasuri Methi, the dried leaf of Trigonella foenum-graecum, takes its commercial name from Kasur — a historic town in Punjab now in Pakistan — where a particularly aromatic ecotype of fenugreek was traditionally grown. The fresh green leaves are harvested before the seeds mature and carefully sun-dried to preserve their characteristic bitter-sweet, maple-like aroma derived from the compound sotolone. In Ayurvedic dietary medicine, dried fenugreek leaf is incorporated into preparations supporting digestion, lactation, and metabolic health. Rajasthan, Gujarat, and Madhya Pradesh are the principal commercial production states. The dried leaf is also one of the defining flavour components of North Indian curry and dal preparations, reflecting its dual role as both a culinary condiment and a traditional dietary medicine.
