Description

Petroselinum crispum, parsley, is a biennial herb of the family Apiaceae, native to the central and eastern Mediterranean — particularly Sardinia, Turkey, and Greece — from where it was introduced to northern Europe by Roman legions and subsequently spread globally through colonial botanical exchange. The curly or flat-leaf varieties are cultivated as primary culinary herbs across virtually all temperate and subtropical growing regions. Rich in apiol, myristicin, essential oils, and the flavonoid luteolin, parsley leaf and seed carry documented pharmacological activity as diuretics and digestive stimulants referenced in classical Greek (Hippocrates, Dioscorides) and Roman (Pliny) texts. In Ayurvedic-adjacent and Unani pharmaceutical traditions, Ajmoda (which sometimes refers to parsley and sometimes to ajwain) has been incorporated in digestive and urinary preparations. Cultivated in limited quantities in Maharashtra, Karnataka, and Himachal Pradesh.
