Nukra Hing represents a premium, relatively uncompounded grade of asafoetida — the dried oleo-gum-resin obtained from the rhizome and root of Ferula asafoetida and related Ferula species native to the arid mountainous regions of Iran, Afghanistan, and Central Asia. Unlike the commercially compounded yellow or white asafoetida tablets (mixed with wheat flour and rice flour for dilution), Nukra Hing retains a higher concentration of the sulfurous volatile compounds responsible for its characteristic intensely pungent odour — primarily E-1-propenyl sec-butyl disulfide and related organosulfur compounds. Known in Ayurveda as Hingu and documented in the Charaka Samhita for digestive, antispasmodic, and carminative preparations, asafoetida has been an indispensable culinary spice in South Indian and Jain vegetarian cooking for centuries. India imports raw resin primarily from Afghanistan and Iran.
