Description

Sonth — dried ginger powder — is produced from the carefully sun-dried rhizomes of Zingiber officinale, the cultivated ginger plant of the family Zingiberaceae, believed to have been domesticated from wild Zingiber populations in the Indo-Myanmar borderlands or the Indian subcontinent over five thousand years ago. When fresh ginger is dried, specific enzymatic and thermochemical reactions transform the primary pungent compounds: gingerols are dehydrated to the more potent shogaols, significantly altering the phytochemical profile compared to fresh rhizome. India leads global ginger production, particularly in Kerala, Meghalaya, and Nagaland. Documented in the Charaka Samhita as Nagara and Vishwabheshaja — ‘universal medicine’ — Sonth is incorporated in Trikatu (three pungent spices) preparations and hundreds of classical Ayurvedic compound formulations. Listed in the Ayurvedic Pharmacopoeia of India.
