Tazaki Hing — ‘fresh hing’ — designates the freshly collected and minimally aged oleo-gum-resin of Ferula assa-foetida, the giant fennel of Central Asian highlands, specifically as distinguished from older, more oxidised grades of asafoetida in the Indian market hierarchy. Ferula assa-foetida is a large, perennial monocarpic herb native to the arid mountainous terrains of Iran, Afghanistan, and Central Asia, from where the resin is harvested by making shallow incisions into the roots of mature plants. The fresh resin carries an intensely pungent organosulfur odour from compounds including E-1-propenyl sec-butyl disulfide, which diminishes with aging and processing. Known as Hingu in classical Ayurveda and documented extensively in the Charaka Samhita for digestive, antispasmodic, and Vata-alleviating formulations, asafoetida remains an indispensable flavouring and pharmaceutical ingredient in South Asian herbal commerce.
